There are several recipes for Easter Cakes that I’ve tried, and since Easter is coming up, I’ll post them here now. An Easter cake can be anything with a Spring-time flavor, or with an Easter theme (Easter baskets, bunnies, etc.) Here are the Easter cake recipes I’ve tried:

Carrot cake makes a great Easter cake – it’s tasty, and themed right!
1. Preheat oven to 350 degrees F. Grease and flour a 9×13 inch pan.
2. In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
4. To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners’ sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.

Follow the recipe for a typical yellow cake, and frost it with a white colored frosting. Decorate the top of the cake with green-colored coconut, and then put a layer of jelly beans and gumdrops on the top. Create a handle with pipe cleaners or other art supplies. It’s an easy and beautiful cake!

Easter basket cupcakes are easy – just make a white colored cupcake, put down a few strands of green-colored coconut, then place a few jelly beans on top. To really jazz it up, make a basket handle with a licorice stick or a pipe cleaner. They are totally cute!
