
I love using my rotisserie chicken roaster, but I could never get the meat to turn out just right until I found this great Rotisserie Chicken Rub Recipe. Sometimes I add more pepper to kick it up a little bit, but it’s definitely good as-is.
Rinse chicken and pat dry. Mix all rub recipe ingredients, then rub each chicken inside and out with mixture. Place a quartered onion inside each chicken. Cook on rotisserie grill for 1 to 1.5 hours for a 4.5 to 5 lb chicken – make sure to check the internal temperature. Let stand 10 minutes before carving. For extra flavor, coat chickens & refrigerate for 4 hours or overnight.
