
I love Houston’s their steaks are the best. I especially like the Hawaiian Ribeye, it’s got a nice tang to it, and the marinade makes it especially moist. Since I’m such a fan, one of the first copycat recipes I wanted to find when I starting cooking was the recipe for Houston’s Hawaiian Ribeye Steak. Recipe ideas were everywhere, but no one seemingly had the real thing, so I had to do some experimenting. Here were the Houston’s Hawaiian Ribeye Steak recipes I tried:
13 oz. soy sauce
13 oz. sugar
6 oz. apple cider vinegar
6 oz. pineapple juice
1 1/2 to 2 teaspoons granulated garlic
1 1/2 to 2 teaspoons ginger
Put all ingredients in a double boiler and cook. Let steaks marinate for 2-3 days in fridge.
This one turned out really good, and was very close to the real thing. One key is to get the best cut of meat possible – the first time I tried it I used a cheap cut, and it didn’t come out well at all.
Here’s the second recipe I tried:
1 (8 oz.) can crushed pineapple with juice
1/2 cup soy sauce
1/2 cup Worcestershire sauce
3 tbsp. unsweetened pineapple juice
1 tbsp. honey
1 tbsp. lemon juice
1/4 to 1/2 tsp. ginger
Combine all ingredients in large bowl. Put steak, chicken or pork into the bowl and cover with foil. Refrigerate overnight.
I feel like this one wasn’t as close to the real thing as the first one, but it tasted awesome. We had friends over for a BBQ that tried this with chicken, and they couldn’t stop raving about how great it tasted!

1The first recipe is bang on with one exception, add about 3 cups of suger, yes 3 cups. I asked the managing chef at the houstons in NYC and he told me to add 3 cups of sugar, I was very leary but tried it and it worked out perfectly. I used everyting you listed and the chef listed the same items

3When I did the recipes I made two steaks each time, but had plenty of extra. I could have probably done four steaks.

4So would I use 3 cups of sugar in addition to the 13oz of sugar or would I use 3 cups period.

6I really love steak at Houston. I just have a question regarding your 1st recipes…13 oz. soy sauce, 13 oz. sugar (3 cups), 6 oz. apple cider vinegar
6 oz. pineapple juice… will be a huge amount of liquid, so your recipes is for how many steaks? Thanks a lot!!!!

10Yep, I am going with Regi and the 3 cups of sugar. Going to put this on beef ribs. Years ago, KC Masterpiece BBQ and Grill did a beef rib with a marinade that was very similar if not the same. Both restaurants are in KC. So I am going to try with the beef ribs and report back.
Ribs will be baked in oven and then seared on grill. Make sure if you try the beef ribs to peal off the skin behind the bones.
