I hope the cooked chickens that they sell at Costco are healthy, because I eat a lot of them! I think even better than the chicken is the leftovers – I shred all the greasy chicken bits, and make sandwiches, soup, tacos, burritos, you name it! Here are some of my favorite quick shredded chicken recipes:
Mix pretty much any soup packet together, and simmer it for a little while with the shredded chicken. Or dump in some tomato sauce and italian seasoning for a spicier burger.
Add the shredded chicken to a few cans of noodle or vegetable soup, and you’ve got a protein rich, super-filling soup!
Simmer the shredded chicken with a pack of taco or burrito seasoning, then add it to flour or crunchy tortillas, with shredded cheese and all the fixin’s, and you’ve got some great Mexican food.
Of all the recipes, this one is truly the quick shredded chicken recipe from my files. Just add some mayo, salt, pepper and diced celery to your shredded chicken, and you can eat is on sandwiches, placed on top of lettuce, or in burgers!
Take care that you don’t leave the shredded chicken out too long – it doesn’t stay sanitary for very long, and I’ve gotten sick from it before! Ugh. Also, if you know of any good recipes, share them in the comments!
