Here’s another almond-y dessert I like – Italian Almond Fingers! Recipes like this one are great because they are fairly easy to make, and if you mess up it doesn’t really matter. It still tastes great!
Almond Fingers Recipes
INGREDIENTS
- 1/2 c. Butter or Margarine softened
- 3 tbsp. Granulated Sugar
- 1 tbsp. Water
- 1 tsp. Almond Extract
- 1/4 tsp. Salt
- 1 c. All-Purpose Flour
- 1 c. (4 1/2oz) finely Chopped Almonds
- 1/2 c. Powdered Sugar
DIRECTIONS
- In large bowl, cream butter and sugar until mixed well. Beat in water, almond extract and salt.
- With mixer on low, gradually beat in flour.
- Stir in almonds.
- Chill dough at least 30 min.
- Roll dough into small 2 inch long fingers. Place on ungreased cookie sheet about 1 inch apart.
- Bake at 350 degrees for 15 to 18 minutes.
- Cool slightly on cookie sheet
- While cookies are still warm, roll in powdered sugar
Notes on Almond Fingers Recipes
For some variation, try rolling the almond fingers in powdered sugar again after they are completely cooled. You can also and things like chocolate chips, dried fruit, and other confections. It’s hard to go wrong!
